Is there anything special to bear in mind when buying aftermarket coilovers for a syncro?

Get the stainless body ones, they dont seize up as fast as you can see from the photo of the DIN testing
I was thinking of Tein’s or KW’s.

Does anyone also know a good make of anti roll bars for the syncro? also are the rear ones the same as the front ones?

The first step in way of upgrading antiroll bars is rallye items, changing the rear and leaving the front one stock is quite a popular option
Thats my set up as well, and it works very well with the stiffer springs, btw the rear anti roll bar is available from VW in three flavours, thats standard at 18.5mm, Rallye/Passat Syncro at 20mm and a whopping 25mm diameter bar for the Passat Syncro with self levelling rear suspension,
The most popular option is leaving the front bar standard and fitting the 20mm rear bar, this gets rid of nearly all the understeer and gives nice almost neutral handling! this by the way is a direct swap, you just change the bar and its 4 mounting rubbers, to fit the 25mm bar you need to weld bigger bracket holders to the rear axle carrier.

Is the Passat Syncro rear bar better than the Rallye bar? What will you suggest for an optilmal tarmac setup?

You should ask rally ronan as he has the 25mm rear ARB
